There's actually two kinds of salami on this board (note the slight color difference in the center and right most line of slices). There's both Napoli Salami and Calabrese Salami.
Napoli Salami is a mix of pork, veal and pork fat, in equal parts with a seasoning blend of salt, black pepper, red pepper and garlic cooked in wine.
Calabrese Salami should be made with only pork meat, but beef is occasionally added to increase it's volume. The seasoning blend for Calabrese Salami is similar to Napoli, and also contains hot (capsaicin) peppers and Calabrian paprika from the region — but no wine.
