These are Limoncello Meringue Tarts and they were very, very popular… and for good reason! They were so light and bright with a surprisingly delicate cookie like crust that didn't overpower the meringue.
Limoncello, in case you were wondering, is a lemon liquor that originates in Italy. It's ABV is around 30% and in the case of the Meringue Tart pictured here, it bring a little extra lemon punch to the party. While I'm not sure of the exact methods used in this dessert, my guess is that a small amount of Limoncello is mixed with the lemon filling and not the Meringue itself.
