The 4 Rivers Cantina Barbacoa Food Truck is a food truck that doesn’t move so much. Technically it’s located in what’s considered the “West Side” at Disney Springs. If you’re looking at the giant balloon and can see Starbucks on your left, head down that left walkway about 100 feet and you’ll find the 4 Rivers Food Truck on the right. If you see Summer House on the Lake or the Salt & Straw — you’ve gone too far.

Their Cantina Barbacoa Food Truck is an offshoot concept that features Mexican-inspired items — like tacos, a couple of veggie bowls, tortillas and quesadillas — pretty much what you would expect a taco truck in the US to offer.
Barbacoa — is a barbecue cooking method that originated in the Caribbean and loosely refers to slow cooking a whole sheep or goat over an open fire. I’m sure the 4 Rivers Cantina Barbacoa Food Truck is using more "American standard" meats and barbecuing methods... “Cantina” looks great painted on the side of a food truck though.
