Chef Kevin Dundon (of Raglan Road
fame) always brings amazing dishes to the Culinary Demos and 2014 was no exception. His Spiced Duck Breast with Carrot and Coriander Puree with Mango Chili Salsa
really pushed the boundaries of what you would typically think about, in terms of Irish cuisine. Paired with a French Rosé Chateau D'Esclans, I would happily order this dish as a main entrée at any restaurant.
Chef Dundon is a real pro when it comes to executing demonstration style cooking. His demos are always fun, informative, and entertaining. He does an exceptional job of showing the audience what he's doing and why he's doing it.
If you only have time to attend one demo while you're at Epcot's International Food and Wine Festival
, and Chef Dundon happens to be one of the visiting chef... it's totally worth the effort to go. He's consistently one of my "top five" must see Culinary Demo chefs!

John Ekin had been the "two day a week" host of the Culinary Demos for almost as long as Pam Smith RDN!
Chef Dundon has a great presentational style when cooking. It's clear he's done many culinary shows because he always shows us what he's working with, rather than just "making the dish".
John Ekin and Chef Kevin Dundon make a great on-stage pairing and there always seemed to be a genuine camaraderie between the two "blokes" that's fun to watch.
